Wine Profile
Tasting Notes
The wine features aromas of black cherry, chocolate, mint, root
beer, vanilla, cedar, and roast beef. On the palate, a soft attack of
roast meat, cherry, chocolate pudding, and sage is highlighted by
a medium body and food-friendly acidity, leading to a textured
finish.
Winemaker Notes
The 2013 Merlot was hand-picked at the peak of flavor development
from early September through October. Grapes were
crushed then went through an 11-day fermentation period in 100%
stainless steel with cap punch-downs three times daily to maximize
flavor extraction. The wine was barrel-aged for 18 months in
French oak, 50% new.
