2007 Pinot Noir Tasting Notes

Philosophy

A tiny vineyard owned and farmed by Tom Larson, our approach is classical in a Burgundian sense of style and taste.

Appellation

100% Sonoma Coast; Larson Family Vineyards. Sonoma Coast is a unique cold climate growing area west of the Russian River Valley; just five miles from the Pacific Ocean, on the far western reaches of the Sonoma Coast appellation. Low yields of mature fruit with high levels of natural acidity, intense flavors and remarkable complexity result from the long, cool growing season, where harvests may extend into early November.

100% French Dijon Clone Pinot Noir

Vinification

The ripened grapes were handpicked at the peak of ripeness in September at 24.7 degrees brix. The grapes were in a cold soak for 72 hours and then inoculated with yeast for fermentation. Spraying the cap three times daily during fermentation to maximize flavor extraction attained gentle extraction of grape flavors and color. We followed fermentation with 5 more days of extended maceration and then gently membrane pressed the wine off the skins. The wine as aged in French oak barrels for 8 months. While aging, the wine was racked 3 times to encourage maturation and clarification.

Tasting Notes

Our classic Pinot Noir is rich with fruit tones of black cherry, raspberry, rose petals, blackberry and black currant, with undertones of baking spices, chocolate, toast and clove. Smooth on the palate, with good acidity revealing layers of silky mouth-filling strawberry seed, cherry, mixed berry, plum fruit, and pomegranate, mingled with spice notes of cinnamon, nutmeg, and clove, with hints of roses, violets, and black tea. Toasty vanilla oak notes and luscious flavors end in a very long silky touch to a layered and lengthy finish.
